Nutritious, easy, and delicious Kimchi Guacamole!
One of the simplest ways you can show your microbiome some love is to feed it probiotic-rich foods by incorporating some good old-fashioned fermented foods. Even a tablespoon a day will go a long way! Below is a recipe by Chef Kendra Peterson for easy, delicious Kimchi Guacamole.
Kimchi is a spicy Korean side dish, usually made from fermented cabbage. Its lactic acid bacteria benefit digestive health. It is also low in calories and high in fiber, antioxidants, vitamin C and B.

KENDRA’S KIMCHI GUACAMOLE
Serves 3-4 people as an appetizer
INGREDIENTS
3 avocados
1/4 c. packed cilantro
juice of 1 lime
pinch of salt
1/2 c. kimchi, finely chopped
INSTRUCTIONS:
(1) Scoop out the avocados into a bowl and mash with the back of a fork.
(2) Add the packed cilantro, lime juice, pinch of salt, and the chopped kimchi and mix until combined.
(3) Taste for seasoning and add more salt or more lime juice as needed.
