Our zesty pesto recipe can be used on or with anything and everything!
It packs a powerful dose of mint, a fresh herb filled with phytonutrients that help balance blood sugar and fight inflammation. The scent is energizing. Make a weekly batch to have on hand to jazz up literally any dish! Use as a pasta sauce, elevate roasted veggies, stir into mashed potatoes, add to butter, stuff in a chicken breast…presto, it’s better with pesto!
MINT PISTACHIO PESTO RECIPE
- 1 cup packed mint
- 1⁄2 cup olive oil
- 1 cup pistachios (de-shelled)
- Juice of one lemon
- 1 tsp. lemon zest
- 2 cloves garlic
- 1⁄4 cup finely grated pecorino cheese (optional) Celtic sea salt and fresh pepper to taste
Blend all ingredients in a food processor until smooth, about two minutes. Or, you can coarsely chop the mint, pistachios, and garlic for a more rustic texture. Next, combine all ingredients, mix well, and enjoy. For both preparation options, store in an airtight container in the refrigerator for up to five days.
Yields: about 1.5 cups/12 servings
